Coconut Ice

Ingredients
This is one of my favourite recipes from my childhood. Mom might make it once a year. Just having it around was a special occasion.
Put milk and sugar into a saucepan over medium heat. boil for 5 minutes. Add coconut and simmer, stirring constantly, for 10 minutes. BE CAREFUL not to burn it. Remove from heat. Beat until creamy and pour into a lightly greased 8 inch square pan. Make a second batch. Add enough food colouring to make a light pink. Pour over the top of the first batch. Let cool. Cut and serve.
NOTE:
If you wanted to, you could pour it into a larger pan and do 3 or more layers. Do not chill until all layers are in place.It is easiest to cut at room temperature. Cut into squares, place on a plate or in a container, and then refrigerate.
