Krispie Squares

Recipe file created November 7, 1999.
The variations are less sweet and less sticky than other recipes I have tried. For something extra special, coat the top of the squares with melted chocolate.

1/4 cup margarine
3 cups mini marshmallows (about 30 large)
1 tsp vanilla
4 cups rice crisp cereal

Grease a 9 inch square cake pan. In a large saucepan, melt the margarine and marshmallows together. Remove from heat. Add vanilla, then cereal. Spread the mixture in the cake pan. Cool . Cut into squares.

Chocolate Krispie Squares

Add 3/4 cup semi sweet chocolate chips to melted marshmallow mixture. Add cereal when chocolate is melted.

Peanut Butter Krispie Squares

Add 3/4 cup peanut butter to the melted marshmallow mixture. Blend until smooth, then remove from heat and add cereal.

NOTE:

Do not overcook the marshmallow mixture. Especially when using chocolate or peanut butter. The squares will come out hard instead of chewy.
For something extra special, layer two or more variations in a large pan. I use my lasagna pan for this. Then I melt 1/4 cup chocolate chips and spread it on top.
